Sweet and Sour Seashells
- 1 lb. of uncooked small seashell macaroni, which is 9 cups cooked
- 2 tablespoons of vegetable oil
- ¾ cups of sugar
- ½ cup cider vinegar
- ½ cup wine vinegar
- ½ cup water
- 3 tablespoons mustard
- 2 oz. Jar of sliced pimentos
- 2 small cucumbers
- 2 small onions thinly sliced
- 18 lettuce leaves
- Black Pepper to taste
You will also need a 4-quart bowl and blender.
To prepare
- Cook the macaroni in unsalted water, drain, rinse with cold water and then drain again. Then stir in oil.
- Transfer the macaroni to a 4-quart bowl. Then place the sugar, vinegars, water, mustard, salt, pepper and pimento in the blender. Process at a low speed for 15-20 seconds then pour over the macaroni.
- Cut up the cucumber in half lengthwise, and then slice thinly. Then add pasta with onion slices and toss well.
- Cover and marinate in refrigerator for 24 hours, stirring occasionally.
- Before serving drain well then serve over lettuce.
This dish will yield 18 servings, which is a ½ cup serving size.
