Sweet and Sour Seashells

  • 1 lb. of uncooked small seashell macaroni, which is 9 cups cooked
  • 2 tablespoons of vegetable oil
  • ¾ cups of sugar
  • ½ cup cider vinegar
  • ½ cup wine vinegar
  • ½ cup water
  • 3 tablespoons mustard
  • 2 oz. Jar of sliced pimentos
  • 2 small cucumbers
  • 2 small onions thinly sliced
  • 18 lettuce leaves
  • Black Pepper to taste
You will also need a 4-quart bowl and blender.

To prepare
  1. Cook the macaroni in unsalted water, drain, rinse with cold water and then drain again. Then stir in oil.
  2. Transfer the macaroni to a 4-quart bowl. Then place the sugar, vinegars, water, mustard, salt, pepper and pimento in the blender. Process at a low speed for 15-20 seconds then pour over the macaroni.
  3. Cut up the cucumber in half lengthwise, and then slice thinly. Then add pasta with onion slices and toss well.
  4. Cover and marinate in refrigerator for 24 hours, stirring occasionally.
  5. Before serving drain well then serve over lettuce.
This dish will yield 18 servings, which is a ½ cup serving size.
