Chicken Marsala

1/8 teaspoons of black pepper

¼ teaspoons of salt

¼ cups of flour

4 skinless chicken breast

1 tablespoon of olive oil
-
½ cup of marsala wine

½ cup of chicken stock or chicken broth

½ lemon for fresh lemon juice

½ cup of sliced mushrooms
-
1 tablespoon chopped fresh parsley
To prepare

Mix together pepper, salt and flour and then coat chicken.

In a heavy bottom skillet, heat the oil and place the chicken breast to brown
on both sides. Once the chicken is browned remove from the skillet and set
aside.

In the skillet add wine and stir well. Then add lemon juice, stock or broth and
mushrooms. Stir well, reduce heat and cook for about 10 minutes until the sauce
is partially reduced.

Return the chicken breasts to the skillet and spoon the sauce over the chicken.

Cover and cook for about 5-10 minutes or until chicken is cooked thoroughly.

Serve the sauce over the chicken with your favorite vegetables and garnish with
chopped parsley.
This dish will yield 4 servings, which is 1 chicken breast with 1/3 cup of
sauce.
