Banana Nut Bread

  • 1 cup of mashed ripe bananas
  • 1/3 cup of low-fat buttermilk
  • ½ cup of packed brown sugar
  • ¼ cup of margarine
  • 1 egg
  • 2 cups of sifted all-purpose flour
  • 1 teaspoon of baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup of chopped pecans
To prepare
  1. Preheat oven to 350 degrees and lightly oil 2- 9 x 5 inch loaf pan.
  2. Stir together the mashed bananas and buttermilk then set aside.
  3. Cream the brown sugar and margarine together until light. Beat in the egg and add the banana mixture, then mix everything well.
  4. Sift together the flour, baking powder, baking soda and salt, then add all at once to the liquid ingredients. Stir until this mixture is blended well.
  5. Stir in nuts and place in pan to bake.
  6. Bake for about 50-55 minutes, then let cool for 5 minutes.
  7. Remove bread from the pan and complete cooling on a wire rack before slicing.
This dish will yield 2 9 x 5 loaves, which is a serving size of ½ inch slice.
