Banana Nut Bread
- 1 cup of mashed ripe bananas
- 1/3 cup of low-fat buttermilk
- ½ cup of packed brown sugar
- ¼ cup of margarine
- 1 egg
- 2 cups of sifted all-purpose flour
- 1 teaspoon of baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup of chopped pecans
To prepare
- Preheat oven to 350 degrees and lightly oil 2- 9 x 5 inch loaf pan.
- Stir together the mashed bananas and buttermilk then set aside.
- Cream the brown sugar and margarine together until light. Beat in the egg and add the banana mixture, then mix everything well.
- Sift together the flour, baking powder, baking soda and salt, then add all at once to the liquid ingredients. Stir until this mixture is blended well.
- Stir in nuts and place in pan to bake.
- Bake for about 50-55 minutes, then let cool for 5 minutes.
- Remove bread from the pan and complete cooling on a wire rack before slicing.
This dish will yield 2 9 x 5 loaves, which is a serving size of ½ inch slice.
