Apple Coffee Cake
- 5 cups of tart apples, cored, peeled and chopped
- 1 cup of sugar
- 1 cup of dark raisins
- ½ a cup of chopped pecans
- ¼ of a cup of vegetable oil
- 2 teaspoons of vanilla
- 1 egg, beaten
- 2 ½ cups of sifted all-purpose flour
- 1-½ teaspoons of baking soda
- 2 teaspoons ground cinnamon
To prepare
First preheat your oven at 350 degrees.
- Then lightly oil a 13x9x2 inch pan
- In a large mixing bowl, combine the apples with the sugar, raisins and pecans
and mix well. Let this mixture sit for 30 minutes.
- Next, stir in the oil, vanilla and egg. Sift together the flour, baking soda
and cinnamon and then stir it into the apple mixture about 1/3 at a time; just
enough to moisten the dry ingredients.
- Finally, pour the batter into the pan and bake for 35-40 minutes.
- Cool the cake slightly before serving.
This dish will yield 20 servings, which is a 3 ½ inch x 2 ½ inch piece.
