Apple Coffee Cake

  • 5 cups of tart apples, cored, peeled and chopped
  • 1 cup of sugar
  • 1 cup of dark raisins
  • ½ a cup of chopped pecans
  • ¼ of a cup of vegetable oil
  • 2 teaspoons of vanilla
  • 1 egg, beaten
  • 2 ½ cups of sifted all-purpose flour
  • 1-½ teaspoons of baking soda
  • 2 teaspoons ground cinnamon
To prepare

First preheat your oven at 350 degrees.
  1. Then lightly oil a 13x9x2 inch pan
  2. In a large mixing bowl, combine the apples with the sugar, raisins and pecans and mix well. Let this mixture sit for 30 minutes.
  3. Next, stir in the oil, vanilla and egg. Sift together the flour, baking soda and cinnamon and then stir it into the apple mixture about 1/3 at a time; just enough to moisten the dry ingredients.
  4. Finally, pour the batter into the pan and bake for 35-40 minutes.
  5. Cool the cake slightly before serving.
This dish will yield 20 servings, which is a 3 ½ inch x 2 ½ inch piece.
